A Valentine’s Day breakfast

One of my favorite Valentine’s Day breakfasts is Bird in a Nest. This simple recipe is as delicious as it is pleasing to the eye. The recipe below serves one; double it to enjoy with your sweetie! Here is the how-to:
 
Ingredients:

  • 1 egg
  • 1 slice of bread
  • A handful of pea shoots
  • A splash of olive oil for cooking
  • Salt, Pepper, Hot Sauce for seasoning

Directions:
 
Cut a heart (or your favorite shape) out of the center of a slice of bread. Heat olive oil in a frying pan on medium and lightly toast the bread and heart. Remove the heart from the pan and set aside. Then crack the egg into the center hole of the bread. Cook until the egg is set enough to hold its shape and then flip the bread over cooking the egg a little more on the other side. Plate the Bird in a Nest with a handful of pea shoots topped with the toasted heart. Season with salt, pepper and hot sauce for a spicy Valentine’s Day breakfast!
