The Fauxjito

Maybe your kids have been eyeing your weekend cocktails, or maybe you just need a pick-me-up in the middle of the work day. Behold your new favorite (and kid friendly) summer beverage: The Fauxjito.

The Fauxjito is essentially a Mojito without the rum, and it will let you take advantage of that mint bed that has been getting a little too big for its britches! Here is the basic recipe. Feel free to embellish with a cucumber, a couple of strawberries, or whatever is fresh in the garden.

Slice the lime into 6 segments. Squeeze 3 segments in each glass leaving the slices outside of the glass for now. Tear off the leaves from a few mint sprigs and muddle in the lime juice. I used about 20 leaves. If you don’t have a muddler, crush the mint leaves with the back of a spoon in the lime juice against the side of the glass. Add ice, fill the glass with sparkling water and top with another mint sprig or some edible flowers! Serves two.
