Recipe: Quinoa Stuffing for Cupcake Squash

There's so many ways to add flavor to your Cupcake Squash! Here's a stuffing recipe featuring Quinoa and aged cheddar. Enjoy!

1 cup quinoa
1/2 to 3/4 cup aged cheddar cheese (depending on how much you like cheese)
Sage to taste
Thyme to taste
2-3 green onions chopped
Optional: tomatoes and sautéed onions

Hollow out the center of the Cupcake squash. Drizzle inside and out with olive oil. Add salt and pepper. Bake the squash in a preheated 350 degree oven for 15-18 minutes or until squash is tender. Combine all of the ingredients above and stuff into the baked squash. Then broil for 3-5 minutes with additional aged cheddar on top. Garnish with Thyme.
