Lemon balm herb biscuits

When it comes to using all of the herbs in my garden, I never have much difficulty finding neat recipes to try out ... except when it comes to lemon balm!

Over the past few weeks, my Burpee lemon balm had become more unruly and was in desperate need of a good trim. I just didn’t know what to do with all the lemon balm I harvested.

After searching and searching, I finally found a recipe that sounded promising: lemon balm biscuits.

Ingredients
1 cup tightly packed Burpee lemon balm
2 cups unbleached flour
1 Tbsp. baking powder
2 Tbsp. granulated sugar
1/3 cup salted butter (cold)
1 cup milk

Instructions
Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or lightly coat with cooking spray.

In a blender, puree the milk and lemon balm together. Set aside for later use. In a large bowl, mix together the flour, baking powder and sugar. Add in the cold butter and mix together until there are no large pieces of butter. (Pro tip: I found that using my hands was the easiest way to do this step!)

Pour the milk and lemon balm mixture into the bowl. Stir all ingredients together until well combined.

Using a spoon, drop large dots of batter onto the baking sheet three inches apart. Place baking sheet in the oven for 12-15 minutes. You’ll know the biscuits are done when they are lightly browned.

This recipe was incredibly easy to follow and did not require too many ingredients ... not to mention they were really tasty and my roomates ate them up in a flash!

The biscuits have a lightly sweet taste to them, and were delicious when served with honey. Each batch makes between 8-12 biscuits, which are sure to be a savory hit in any setting!
